This product is obtained from the most valuable, mature and sexually mature Caspian mollusks, providing exceptional caviar with a caviar size of about 2.2-2.8 mm. Smooth, with a platinum hue and creamy taste, it resembles beluga caviar. Beluga caviar is known for its rich, oily taste with a slight nutty note. The Kura pilot plant was built in 1954 near the permanent spawning grounds of sturgeon fish in the village of Yenikend in the Neftchala region. The technologies developed here were used in many similar enterprises around the world and remain in demand to this day.

Due to its excellent quality, graininess and unique taste, Azerbaijani caviar was very popular in Western Europe. Many world leaders enjoyed this delicacy, including Sir Winston Churchill.
